Cucumber Chickpea Salad
This one here is super easy to make. It is literally getting a bunch of ingredients and tossing them together in a bowl for yummy goodness. This salad can be used as a side dish, or as a light dinner.
The ingredients you'll need for this recipe include...
1 large cucumber
1 can of rinsed chick peas
1 red bell pepper
1 yellow bell pepper
Approximately 2 cups of cherry tomatoes
1 bushel of fresh cilantro
Queso fresco
1 lemon
Olive oil, salt & pepper to taste.
Rinse and chop all of the produce. Mix it together in a salad bowl. In a separate small bowl, whisk together the lemon, olive oil, salt and pepper. When you are ready to serve, add the crumbled queso fresco and the salad dressing.
