Calling all Yogis & Health Nuts
Kitchari is a staple in any ayurvedic diet. Even if you know nothing about Ayurveda, the health benefits are something that everyone can benefit from. Kitchari is equal parts white basmati rice and yellow lentils. This combination of food provides the body with everything it needs to be healthy. It is soft on the digestion, and it helps to eliminate any built up toxic residue that you might be carrying.
Here are a couple of recipes for kitchari.
For the picture above...
Cook the rice and lentils in a veggie broth.
In a small pan, add turmeric, ginger, garlic, cumin, coriander, and fennel to a tablespoon of ghee. Let the spices mix in with the ghee.
Add carrots, chopped onions, and kale.
Once everything is cooked, put it together and enjoy!
For the second picture, I tweaked kitchari just a little.
I cooked the rice and lentils in a tomato based sauce. I used an 8 oz can of tomato soup and stirred it with 8 oz of vegetable broth. I added water as needed.
For spices, once again, I used oregano, basil, rosemerry, thyme, and ground pepper, and chopped garlic.
I cooked asparagus and green beans on the side and added them to the kitchari once they were cooked.
Once the kitchari and the veggies were done, I added artichoke hearts and olives.
One of the reasons I love kitchari so much is because it is sooo easy to make. It doesn't take much time or effort. It is pretty versatile. You can add any herbs and spices that your body currently needs. You can tailor it to your cravings. It is clean, healthy, and satisfying. And lastly, you can play around with it.
