Peanut Butter & Chocolate!!!
It is getting chilly out there, and that has me craving something warm, sweet, rich, and comforting. This time of year can be cold, dry, bitter, and these elements affect us and our health more than we realize.
One way to maintain our health and vitality during the winter/ cold & flu season, is to expose ourselves to opposite qualities of Vata season, or Winter.
I am always trying to devise a recipe that will satisfy without filling my body with unnecessary calories. This cookie recipe hit the spot. These cookies didn't last long, that says a lot.
Peanut Butter and Chocolate Chip Cookies
Ingredients:
1/4 cup of natural peanut butter
1/4 cup of agave nectar
2 eggs
2 1/4 cup of almond flour
1/4 tsp. of baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cardamon
1/4 tsp. ground cinnamon
1/4 tsp. of ground ashwaganda
chocolate chips
pumpkin seeds
chopped pecans
Begin by beating the peanut butter, agave, and eggs.
In a separate bowl mix the flour, baking soda, and spices. Combine the two until mixed well.
Stir in the chocolate chips, pumpkin seeds, and pecans.
Using a spoon scoop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
Bake at 350 degrees for 10 minutes. When you take them out of the oven, place them on a cookie rack to cool.
Serve with a glass of your favorite milk, and enjoy!!!
