Almond Banana Bread


With Pitta season waning and Vata season on its way, our bodies naturally begin to crave more dense foods.

Bread gets a bad rap these days. I agree that most of it is processed and contains ingredients that cause us more harm than good, but not all bread is bad.

This recipe is a quick bread. Quick breads are popular with home bakers because they are so easy to make. This recipe has nothing but clean whole ingredients in it that will nourish your body, help begin to ground you for the upcoming Vata season, and satisfy your taste buds.

This recipe is so simple to make, even novice bakers will knock this out of the park!

Take 3 bananas...peeled and sliced,

1 heaping tbsp of honey

1 egg,

4 squirts of liquid stevia,

and mix it in a bowl with a mixer until it is mushy.

Next, add 1/4 cup of old fashioned rolled oats,

1 and 3/4 cups of almond flour,

1/4 tsp of baking powder,

a pinch of salt, a pinch of nutmeg and stir it all together.

Slowly add this to the banana mixture.

Stir in slivered almonds and dark chocolate chips. I used less than 1/4 cup of each.

Once it's all stirred up, place in a baking dish. I lined mine with parchment paper. Bake at 350 degrees for 35 minutes.
