Tofu Tacos!
My mantra when in the kitchen is ... Quick, Simple, Fresh & Easy. Tofu is one of those ingredients that fits every category of my mantra. I know that plenty of people are still weirded out about the idea of eating tofu. But here's the thing, tofu has no flavor. This is why many people dislike it. The good thing about this is that tofu picks up the flavors of whatever you add.
You want tacos with a mild Mexican flavor? Guess what? The tofu is going to pick up and absorb every flavor of all the herbs and spices you want. Hence, yummy tofu tacos!
You start out with a base of rice and beans, already cooked. Set it aside. Next you cook your package of drained, extra firm tofu in a saucepan with a dash of salt, and a spoonful of olive oil. You cook the tofu just like you would cook ground beef. It doesn't take long for tofu to cook up, so you can begin to add your spices, such as cumin, coriander, pepper, and what ever other spice you like to add to your Mexican dishes.
I always like to toss in extra veggies to any dish I make. In this instance, I chopped up a green and a red bell pepper and added it, along with a red onion and a few cloves of garlic.
Then you add the rice and bean mixture. In this instance I used black beans. I also added a liquid mixture of red enchilada sauce.
While this continues to cook on the stove, you can chop up some tomatoes, cucumbers, avocados, and sprouts. You can add this to your finished taco as a tasty garnish.
Once everything is cooked, you can put it into a tortilla of your choice. I used corn tortillas. I also like to add crumbled queso fresco to the top of my tacos.
These turned out pretty good. If you haven't given tofu a try, I highly suggest you do. It's worth a try.
