Buffalo Cauliflower Pizza
Holy Vacas...this was so good! Yum Yum Yum. I can't take credit for this recipe.Credit goes to www.crowdedkitchen.com. Over the weekend, my 16 year old came to me and asked if she could plan all of our meals for the week. I said, "sure." She told me that she started following a couple of vegan accounts on Instagram and was inspired to make some of their recipes. So she made a list of all the ingredients we were going to need for all of the recipes she wanted to make, and went to the grocery store, and bought everything we needed.

My daughter & I began this by using store bought flat bread. We placed it on a baking sheet lined with parchment paper.
We then rinsed an entire head of cauliflower, chopped it into bite sized pieces and placed it into a baking dish, where we coated it with olive oil, salt & pepper. We roasted the cauliflower in the oven at 400 degrees for about 20 minutes, until the cauliflower was golden.
While the cauliflower was roasting in the oven, we put an entire bottle of buffalo sauce into a sauce pan, with 2 tablespoons of butter, and let the butter melt. Once the sauce was warm, we lightly coated the flat bread with the buffalo sauce, as you can see in the photo above, and set the rest aside.
While we continued to let the cauliflower roast in the oven, we made the ranch dressing. Now, if you wanted to save some time, you could always use store bought ranch dressing. But in this case, my daughter wanted to make it according to the recipe she found online.
In a small bowl she mixed 1 cup of plain Greek yogurt, with a handful of finely chopped parsley, 1/4 teaspoon of onion powder, 1/4 teaspoon of garlic powder, and freshly ground pepper.
Once the cauliflower was cooked, we took it out of the oven, and tossed it in the bowl with the rest of the buffalo sauce. We made sure to coat the cauliflower real good.
We added it to the flatbread, along with an entire bag of shredded mozzarella cheese. Then we placed the pizza back in the oven just long enough for the cheese to melt.
Once the cheese was melted, we took the pizza out of the oven, and added arugula and sliced avocado to it. We finished by drizzling the ranch dressing over top of it, and proceeded to scarf it down.
I made a small salad to accompany the pizza. I made it with the left over arugula. I added a few other ingredients that were in my frig, mushrooms, tomatoes, pickles. And I topped it off with some of the left over ranch dressing my daughter had made.
It was absolutely delicious, and very easy to make.
The best part of this recipe is that my daughter found it and wanted to make it. And that we made it together.
