Quick Easy Healthy Brownie Recipe
Every once in a awhile we all get a craving that if neglected, grows and grows until it becomes an obsession. Well, maybe I'm exaggerating a little, but cravings don't always have to be ignored. There are plenty of substitutions that can be made when we want something chocolaty, rich, and decadent.
I was recently craving a brownie. I hadn't had one in a long time, like definitely over a year. I know there are plenty of black bean and avocado brownie recipes out there. But I often like to play around with what ever ingredients I have in my pantry, and make my own recipe. Here's what I came up with.
INGREDIENT LIST
2 eggs
3/4 cup of almond flour
chocolate protein powder
1/2 cup maple syrup
dark chocolate chips
1/2 teaspoon salt
2 teaspoons vanilla extract
1 avocado
Begin by preheating the oven to 350. In a medium bowl mix the eggs, the maple syrup, the avocado, and the vanilla extract. Once mixed, set aside.
In a larger bowl mix the almond flour, 4 scoops of protein powder, and the salt.
Using an electric mixer, slowly add the flour mixture to the wet ingredients. Once the ingredients are mixed well, stir in the chocolate chips. I eyeballed it. I recommend using as many or as little chocolate chips as your heart desires.
Place the mixture into a glass dish. I lined mine with parchment paper to prevent any sticking and to make it easier to clean up afterwards.
Bake it at 350 for 20 minutes...give or take.
