Pumpkin Spice Bites

November is the climax of pumpkin spice EVERYTHING!!!!

I know some people get annoyed by the whole pumpkin spice thing. But it's a thing because it is freaking YUMMY! Can't lie, I'm totally on board with the everything pumpkin. As always though...there's a little but of a catch. The stores and restaurants just kind of crap on the health benefits of this naturally nutritious food. Pumpkin is full of antioxidants, beta carotene, vitamins A, C and E.

So load up on everything pumpkin. Enjoy it as part of the season. But stay away from the over processed stuff found in most stores and menus.

Here's a quick and easy recipe you can make in less than 10 minutes.

INGREDIENTS

1/2 cup of pitted dates chopped or pulsed in a food processor.

1/4 cup old fashioned rolled oats

1 heaping spoonful of pureed pumpkin

Ground cinnamon, to taste

Nutmeg, to taste...warning, nutmeg is strong, so be careful with this.

Less than 1/4 cup of honey...eyeball it

A handful of pumpkin seeds, shelled

A handful of dark chocolate chips

Mix all of the ingredients in a large bowl. You want the consistency to be sticky.

With a spoon, or a cookie scoop, form the mixture into little bite sized balls.

Place on parchment paper, so they don't stick to the surface. Refrigerate and enjoy!!!
