Hearty Meatless Meal


Kitchari

I'm all about easy, healthy and efficient when it comes to feeding my family. Aside from feeding myself, I have two teenage kids who eat way more than I'd like to be responsible for feeding and a husband who says that he needs something "that will stick to his ribs."

Believe me when I say that...I get it! Feeding a family a healthy meal is a challenge.

Kitchari is a traditional ayurvedic meal that contains all of the carbs, protein, and essential amino acids the body needs to sustain itself. Problem...it is boring. Blah...I can't eat it, or should I say, I don't want to eat it without jazzing it up a bit. Here is an example of how I jazz up my kitchari.

Try it. See how you and your family like it. Feel free to change it up according to your tastes, or according to what you have in your frig. And let me know what you come up with.

Ingredients:

white basmati rice

yellow lentils

your favorite broth

3 carrots

1 butternut squash

2 cups brussel sprouts

1 can chick peas

1 avocado

boiled eggs

2 tbsp. ghee (may seem like a lot, but this is a lot of rice & veggies)

salt/pepper to taste

1 tsp chili powder

3-4 chopped cloves garlic

1/4 tsp nutmeg

1/2 tsp cinnamon

Cook 2 cups of rice and 1 cup of lentils in your favorite broth (about 6 cups of broth). For 15 - 20 minutes.

Saute the carrots, squash, and sprouts in about a tsp of ghee. Once they are soft, add them to the rice & lentils.

In a separate pan over low/medium heat, stir the salt/pepper, chili powder, garlic, nutmeg, & cinnamon with the ghee. You want to try to form a paste.

Once the veggies and rice are cooked, stir in the paste.

Serve in a bowl. Add the chickpeas, avocado, and a boiled egg to each bowl.

This amount may seem like a lot, and it is. But I will make this when I know I am going to be busy for a couple of days. I make my family eat it for dinner, then again for lunch & dinner the following day.

Please feel free to modify this as needed and desired for your family. Every family is different. This is just an idea to help you eat something hearty, healthy, and easy to make. Let me know what you come up with. And have fun experimenting.
